What Makes a Great Quiche, Lorraine?

Ingredients
  

  • 12 Slices Bacon This crowd-pleasing recipe starts with 12 slices of bacon
  • Cheese Grueyer, asiago, and ricotta for creaminess, along with shredded Swiss, cheese is a perfect combination.
  • 1 Onion Minced onion adds flavor and texture. saute it in the bacon fat.
  • 1 Pie crust Use a store-bought pastry crust or make your own at home. Checkout my Perfect Pie Dough Recipe Here!
  • 2 Cups Cream Two cups of heavy grass-fed cream adds moisture and help create the perfect texture.
  • 4 Eggs Of course you need eggs! Four lare beaten eggs, to be exact.
  • Salt Salt enhances the flavors of the other ingredients.
  • Sugar A pinch of sugar adds subtle sweetness.
  • Cayenne Subtly spice things up with a pinch of cayanne pepper.

Instructions
 

Here are the steps. You can see it's very easy. The trickiest park is the homemade pie crust or you can use a store-bought crust. There are some really good ones out there. Whole Foods has an organic pie crust that I think is acceptable.


  • Preheat the oven to 425℉
  • Cook, chop, and drain the bacon
  • Saute the onions in the bacon fat just until it's slightly translucent.
  • Sprinkle the bacon, cheese, and onion in the shell.
  • Mix the wet ingredients and seasonings, then pour the mixture over the top of the other ingredients
  • Bake at 425℉ for 10 minutes, turn down to 350℉ and continue to cook until a knife comes out clean, which is about 15 minutes.

Notes

I also make quiche using the same recipe, except that I add spinach. I use frozen chopped spinach which I boil in water then put in cheesecloth to ring every drop of water out of it and then throw the cooked spinach in there on top of the other ingredients before pouring in the egg mixture.
