Keto, Vanilla, Ice Cream…. If You Haven’t Had It, You Haven’t Lived!
For those of you on a keto diet one of the things you may be missing is a dish of ice cream. Well, you don’t have to miss it anymore. This recipe is probably going to taste better than most of the ice cream that you have been buying over the years because it’s made almost completely from cream and has very few ingredients so none of the unnecessary ingredients you find in conventional ice creams. It’s even more delicious though if you use 100% grass-fed butter, milk and cream.

Ingredients
- 3 tbsp unsalted pasture- raised butter
- 3 cups Kalona supernatural organic whipping cream from Grass-fed beef (divided into 2 cups and 1 cup)
- 1/3 cup Besti Powdered Monk Fruit Allulose Blend
- 1 tablespoon Dolcetti syrup
- 2 tsp Organic vanilla extract
- 1 cup Organic unsweetened almond or coconut milk (Almond has 60 cal and one net gram of carbohydrate and coconut milk has 50 cal and less than 1 g of carbohydrate. I prefer the coconut milk.)
Instructions
- Use a wide, extra-large skillet (not a saucepan) to melt the butter. The larger surface area will stay hotter as you stir—just like making gravy—so it thickens more quickly.
- Add powdered Besti sugar, 2 cups of heavy cream and vanilla. Bring to a boil, then reduce to a simmer.
- Simmer for 30-45 minutes, stirring frequently, until the mixture is thick (like condensed milk), and coats the back of a spoon. At this point, the volume will be significantly less than when you started. This is why it’s important to use a large pan because the larger the pan the faster this part goes. When you are done, you basically have condensed milk 🙂
- Pour the condensed milk into a large bowl and allow to cool to room temperature.
- Whisk the coconut or almond milk with the “condensed” milk (cream) and refrigerate for at least four hours.
- Transfer the mixture to your ice cream maker which should be frozen and follow the manufacturer's instructions. I like to let it turn until it’s pulling away from the sides. In other words pretty thick. This takes about 20-25 minutes. (If you are adding anything, like chips or fruit this is the time.)
- Use a glass bowl with a lid that you have been keeping cold in the freezer . Fill it up, smooth the top with a rubber spatula and put a piece of parchment paper on top to keep it from icing. Cover it, place it back in the freezer for four hours or overnight.
- Prepare for a real treat!
