Ingredients

  • 2 tablespoons organic avocado oil or olive oil

  • 1 organic 6-inch tortilla

  • 1/4 cup organic black beans, cooked and drained

  • 1 organic pasture-raised egg

  • 2 tablespoons organic tomatoes, diced

  • 1 tablespoon organic cilantro, finely chopped

  • 1 tablespoon organic cotija cheese, crumbled

  • 1/4 organic avocado, sliced

  • sea salt and pepper

  • organic hot sauce

Instructions

  1. Heat the oil in a small skillet on medium heat. Add the tortilla and cook for 30 seconds on each side, until it becomes slightly crispy. Use tongs to remove the tortilla to a paper towel to drain any excess oil.

  2. In the same pan, crack one egg. Fry the egg until it’s cooked to your liking.

  3. To layer the tostada, add the tortilla to a plate. Top with black beans and the fried egg.

  4. Sprinkle the diced tomato, cilantro, and cotija cheese on top.

  5. Slice the avocado and add a couple slices to the plate.

  6. Season with salt and pepper and add a dash of hot sauce, then serve.
